Chocolate Chip Muffins
Beginner friendly and delicious 🍫🧁
3 cups all purpose flour
½ cup white sugar
¼ cup brown sugar
1 tbsp baking powder
½ tsp salt
¼ tsp ground nutmeg
½ tsp ground cinnamon
2 large eggs, at room temp
1 cup unsalted butter, melted and slightly cooled
1 cup sour cream
⅓ cup milk
½ tsp lemon juice
2 tbsp oil
2 tsp pure vanilla extract
Preheat oven to 150⁰C. Line a cup 12-cup muffin tin with paper liner and set aside.
In a large bowl, whisk together the flour, both sugars, baking powder, salt, nutmeg, and cinnamon. Set aside.
In a separate large bowl, add the eggs, melted butter, sour cream, milk, lemon juice and vanilla; whisk well to combined.
Fold the wet ingredients into dry ingredients and, using a rubber spatula, and gently fold the ingredients together. To avoid over mixing, stop stirring when you can still see the slightest trace of dry ingredients. Fold in the chocolate chips.
Divide batter evenly among prepared muffin pan, filling the molds up all the way to the top. Sprinkle with sprakling sugar if desired.
Bake at 150⁰C for 15 - 20 minutes. Keep checking on your muffins. To check if they are fully baked through, insert a toothpick or a knife in the middle of a muffin. If it comes out clean, it is ready!!
Remove the muffins and allow them to cool on a cooling rack.
