Easy Lemon Loaf Cake

Easy peasy lemon squeezy 🍋


  • Finely grated zest of 2 lemons

  • 4 eggs, room temp

  • 1 cup sugar

  • 1 tsp vanilla extract

  • ½ cup greek yogurt

  • ½ cup sunflower oil

  • ½ cup melted butter

  • 2 ⅓ cup all purpose flour

  • 3 tsp baking powder

  • Pinch of salt


  • 2 cups icing sugar

  • Juice from 1 lemon


  1. Preheat oven to 150⁰C.

  2. Generously oil a 9x5 inch baking pan.

  3. In a large bowl, add eggs, sugar and vanilla. Mix until pale and frothy with an electric mixer.

  4. Add in oil, butter, lemon zest, greek yoghurt and continue beating until incorporated.

  5. In a separate bowl, sift in flour, baking powder and salt. With a mwiko, fold in the dry ingredients into the wet ingredients until, don't overmix.

  6. Pour the batter into the pan and bake 50-60 minutes or until an inserted knife comes out clean.

  7. After approximately 30 minutes of baking, when the top is nicely browned, cover with aluminum foil to prevent burning.

  8. Leave it to cool slightly in the pan, then take it out and transfer to wire rack.

  9. For the glaze mix powdered sugar with lemon juice until smooth and lump free (the mixture shouldn't be too runny). Pour the glaze over the cake and leave it to cool.

  10. Serve and enjoy
