Sinfully Rich Fudgy Brownies
Have you ever eaten something so good that you felt like you've sinned? 🍫
225g semi-sweet chocolate
¾ cup melted butter or vegetable oil
1 ¼ cup sugar
2 tsp vanilla essence
¾ cup all-purpose flour
¼ cup cocoa powder
1 tsp salt
Preheat the oven to 180⁰C. Line an 8-inch square baking dish with baking paper.
Chop the chocolate into chunks. Melt half in the microwave in 20 second intervals, save the other half. Allow the melted chocolate to cool.
In a large bowl, mix the melted butter and sugar with an electric mixer or a whisk. Then, beat the eggs and vanilla for 1 - 2 minutes until the mixture becomes fluffy and light in colour.
Whisk in the saved melted chocolate (make sure the chocolate is not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt.
Fold the dry ingredients into the wet ingredients with a wooden spoon. Do not to overmix as this will cause the brownies to be more cake-like in texture.
Fold in the chocolate chunks, then transfer the batter into the baking dish.
Bake for 15 - 20 minutes, depending on how fudgy you want your brownies to be. Let them cool completely.
Cut them into squares as soon as they're out of the oven. If you wait for them to cool, cutting them will be slightly harder.
The chocolate chunks can either be ready made chocolate chips, or a cooking chocolate bar that you can chop into chunks.
