Sugar Cookies That Will Impress Your Valentine's Date!

Hi! My name is Tara and I am a hopeless romantic; a lover of love and a Valentine's day super fan.
I'm the kind of romantic that will audibly go "Awwwww" at slight romantic scenes, like when I see a couple wearing coordinated outfits on the streets, I go crazy; I love that shit!! My friends hate it. But mi nuh care!! I don't like admitting this, but I like to take out some time during the day and daydream about my relationships, especially when I'm crushing/loving someone. If I have ever loved you, it's highly likely that I have placed you in an all white outfit, grilling burger patties and using your spatula to chase our dogs, Ralph and Bosco, that are trying to steal a bite.

Food is love and love should be shared; and there's no better day to go crazy about sharing your love than Valentine's day. I know it's a little late, but I'd love to share an easy recipe, by Pastry Pleasures, with you, that you can make for/with your loved one.
250g salted butter or margarine
1 cup caster sugar
4 cups flour
1 tsp vanilla essence
In a bowl, cream the butter/margarine until light. Add the caster sugar and mix until light and fluffy . You can use a mixer or just a wooden spoon.
Add the eggs and mix well.
Add the vanilla essence and mix until combined.
Add the flour, 1 cup at a time. Mix until well incorporated and it becomes doughy.
Wrap the dough in cling film and refrigerate for about 15 minutes. This makes it easier to roll the dough.
When ready to take out the dough, Preheat your oven to 180⁰C. Take your cookie tray and line it with greaseproof paper.
Dust your counter top lightly, take the dough from the cling film and gently roll it to desired thickness. Using a cookie cutter, cut into desired size and gently place on the baking tray. Cut out heart shapes on half of the batch of of cookies.
Bake the cookies for 10-12 minutes then remove from the oven. Let them cool for at least 5 minutes before transferring them.
Once cool, sandwich the cookies with some red jam. You can microwave some of the jam to make it lighter. Fill in the hearts with the softened jam and even it out with a skewer.
Obviously, everything tastes better when it's shared, so share them with the people that are closest to your heart tonight, or any other day really 😍. You can sprinkle some caster sugar on them if you're really trying to get freaky with it!!
