These Baked Potato Wedges & Chicken Thighs Will Add 10 years to your Life!!

I've been working on this recipe since last year; and in order to perfect it, I've been making it for my family every Friday. Now that it's in its final form, I'm finally ready to share it with the world 🌍

This meal is a result of multiple trial and errors that consisted of too sweet, too salty or just no. Its perfection has been an extensive work in progress, but I finally got what I envisioned a great baked chicken and potato wedges meal should be and I'm more than excited to share it with you guys.

What I love about this recipe is that it transforms a very normal, very boring chicken thigh (or breast, or drumstick) into something unbelievably delicious. Same goes for the potato wedges; you'll never be able to eat regular potato wedges again.

This could be the best version of chicken and chips you will ever have 🔥

It's also really easy to make, which is great for beginners because you literally mix all the ingredients into a bowl, let the flavours seep into the food and bake them altogether!! This recipe will have people thinking you're a pro.


For the chicken...

Prep time: 30 minutes to 8 hours

Cook time: 30 minutes

Serves: 5


  • ½ kg of chicken thighs or breasts or drumsticks

  • ½ cup of sunflower oil

  • ½ cup of balsamic vinegar

  • ¼ cup of soy sauce

  • ¼ cup of Worcestershire sauce

  • ¾ cup of brown sugar

  • 1 teaspoon of cumin

  • 2 teaspoons of dried rosemary

  • 2 tablespoons of dijon mustard

  • 2 teaspoons of salt

  • 1 teaspoon of ground black pepper

  • 3 garlic cloves


  1. Remove the skin from the chicken.

  2. Whisk all the ingredients in a large bowl.

  3. Dunk the chicken into the bowl, make sure all pieces have been covered.

  4. Cover the bowl with cling film and put it in the fridge.

  5. Marinate for at least 30 minutes.

Sidenote: I marinate my chicken for as long as 8 hours. The longer you marinate your chicken the better the taste 👅 and the juicier the chicken.

For the potato wedges...

Prep time: 5 minutes

Cook time: 30 minutes

Serves: 5


  • 15 regular potatoes

  • ½ cup of sunflower oil

  • 4 garlic cloves (minced)

  • 1 teaspoon of salt

  • ½ teaspoon of black pepper

  • 1 tablespoon of dried oregano

  • 1 tablespoon of paprika


  1. Preheat the oven to 180 ̊C.

  2. Thoroughly wash the potatoes, cut them into half and slice into wedges. Make sure they still have their jackets because it's cold outside 😂 Okay seriously, the jackets allow the wedges to be nice and crunchy outside.

  3. Put the potatoes in a big bowl.

  4. Toss the potatoes in the oil, add the garlic. (Use your hands for this)

  5. Add the salt, black pepper, dried oregano and paprika and toss until all the wedges are evenly coated.

Because we'll be baking the potatoes and chicken together, it's wiser to do the potatoes towards the end.

For the chicken and wedges...

  • Line a large baking tray with foil.

  • Oil the tray with enough oil so nothing sticks.

  • Arrange the chicken and potatoes on the same tray; make sure the chicken don't touch each other- they shouldn't be friends. But you can allow the potatoes to get familiar with each other.

  • Throw them into the oven and bake them for 30 minutes at 180 ̊ C.

  • When time is up, take the tray out and cover the side the chicken is on with foil and allow it to rest for 5 minutes. This is a very IMPORTANT step because it will make the chicken soft and juicy.


Serve, and just like that, you have added 10 years to your life.
