These Tantalizing Tacos Will Send You Into A Frenzy

I have plenty to TACO'bout... *ba dum tss* 🥁

There are some days I'm home, alone, broke and wanting to eat something that will lift my spirits. But I look at what's in the fridge, I feel a pit of sadness and disappointment develop in my stomach; the polar opposite of what I'm trying to feel.

The leftovers in there are so discouraging; and what's worse, is that there are so many blueberry and vanilla ice cream containers filled with GITHERI!!

The horror, the deceit, the fraudulence, the pure evil!! I cannot deal with African homes 🤦‍♀️

However, there is something famously known as a blessing; and that is finding a little extra chicken breast at the corner of the fridge, some mangoes and kachumbari from last night's dinner. All you need is a tortilla wrap, and with that, you have yourself a taco. I'll show you...


For the chicken...

Prep time: 30 minutes

Cook time: 12 minutes

Serves: 4


  • 2 chicken breasts

  • ½ teaspoon black pepper

  • ½ teaspoon cumin

  • ½ teaspoon paprika

  • 1 teaspoon salt

  • ½ lemon juice

  • 2 teaspoons of teriyaki sauce

  • 1 teaspoon of soy sauce

  • 1 tablespoon of olive oil


  1. Dice the chicken into bite size cubes.

  2. In a bowl, whisk the black pepper, paprika, cumin, salt, lemon juice and soy sauce. Add the chicken and marinate for 30 minutes.

  3. In a pan, fry the chicken over medium heat till it turns white. Add the teriyaki sauce and cook till it browns.

  4. Take the chicken off the heat and set it aside, in a separate bowl.

For the mango salsa...

Prep time: 10 minutes

Serves: 4


  • 2 finely diced onions

  • 2 finely cut tomatoes

  • 1 diced mango

  • Dhania for garnish (optional)


  • Soak the onions in warm, salty water to remove the strong smell and taste.

  • Then, in a bowl, add the diced onions, tomatoes and mangoes. Add the dania as garnish.

  • Pop the salsa into the fridge to chill.

For the tortilla wraps...


  1. Go to your nearest Carrefour or Chandarana supermarket and buy them.

  2. Switch on your gas, and place your tortilla wrap on top and let if cook for about 15 seconds per side.

  3. Do this for each wrap.

Last step

Assemble your taco by layering the chicken and the salsa according to your preference and top with mayonnaise or sour cream.

This recipe belongs to David Kinyanjui. He really came through for me, for you, for all of us with this one!! It's is so easy, it isn't funny!! And you can use this for any leftover you find in the fridge: beef, veggies, you can even have an avocado taco. THE OPTIONS ARE ENDLESS!!
